Makes 2 portions

For the Spiced Avocado

1 Avocado
1 Lime zest
1 Lime juice
10g Red chilli
20g Coriander
Pinch Salt
Twist Pepper

Method

Dice the avocado, then mix all together until smooth.

For the Panackes

250g Self Raising Flour
4 Eggs, separated
100ml Milk
150g Arla Protein Cottage Cheese
Pinch Salt
20g Butter
100g sliced Smoked Salmon
2 Spring Onions, finely sliced
1 sprig Chives, finely chopped

Method

Sift the flour and salt into a mixing bowl, and make a well in the middle.

Add the yolks, Arla Protein Cottage Cheese and milk in the centre, and, using a whisk, start to whisk the flour into them until smooth.

Whisk the egg whites until soft peak.

Fold them into the egg and flour mix taking care not to lose the air.

Take half of the smoked salmon and finely chop.

Add to the batter mix with the spring onions and chives, and carefully stir in.

Heat a large frying pan on a medium heat.

Add half the butter and when foaming, cooking 2 pancakes at a time, add 2 x 50ml ladles worth of pancake mix (leaving an inch between them) and cook for 2 minutes until light brown on the bottom, and starting to set on the top.

Flip over and cook for a further minute or so, until brown on the bottom side too.

Take out of the pan and put the pancakes onto a plate while you make the next batch.

To serve

4 Hens eggs
50ml White Wine Vinegar

Method

Bring a deep pan of water to the boil and add the vinegar.

Poach the eggs for 3 minutes, then take out onto a kitchen towel to absorb all the water.

If the pancakes have cooled, quickly flash in the oven or in a toaster.

On 2 plates, with 2 pancakes on each, spoon some avocado on each one and add some of the leftover salmon on each.
